For this variety of black tea, which grows on the island of Sri Lanka (Ceylon), only the top tiny whole leaves are collected, fermented, rolled, and dried. In the infusion, the leaves open and give the water a bit of astringency, a honey-floral taste, and a subtle warming aroma.
